  • about 1/4 cup fat-free chicken stock or water (60 ml)
  • ripe avocados (peeled, separated from the stone and diced)
  • half a cup of low-fat natural yogurt (125 ml)
  • 1/4 of a small onion, diced
  • salt and pepper to taste
  • a bunch of cilantro
  • 1 tablespoon of vegetable oil (15 ml)

A method of preparing

  • First, blend the avocado, yoghurt, onion and coriander seasoned with salt and pepper until smooth.
  • Then heat the oil in a medium pot.
  • Pour the mixture from the blender and heat to boiling.
  • Then add the chicken stock and – if you want – more salt and pepper.
  • Bring the cream to a boil again and stirring to keep it creamy.

To use this cream as a soup, pour it into bowls and serve with avocado cubes and cilantro sprigs. Serve bread or make croutons as an appetizer. If, on the other hand, you want to serve cream as an accompaniment to meat or other protein dishes, just pour it over the meat like a sauce just before serving.
